One of the most prized ingredients in the world of cuisine is the truffle or ‘black diamond’. Black Perigord truffles are coveted for their exquisite flavour and rarity – but their exclusivity hasn't curbed their demand.
Recently, Australia has become renowned for the quality of their Black Perigord truffles. Producing the same black truffles (Tuber Melanosporum) as those from France, the reversed seasonality provides truffles even when the season of the Northern Hemisphere has ended. The consistency and quality of these truffles has already been experienced by discerning professionals here in Hong Kong who have been secretly guarding these exceptional truffles.
Arriving brushed and clean, Australian Black Perigord Truffles are available exclusively through Waves Pacific.
Whether it is in Asian or Western, traditional or contemporary cuisine, pork is an important and revered ingredient. It is a shame that up until recently, the quality and heritage of this meat has not held the same stature as beef.
Unfortunately, the pork industry has seen rapid commercialization and the production of ‘efficient’ pigs in the interests of quantity over quality. At Waves Pacific, our approach is to reinvigorate the appreciation of quality pork.
Our Japanese pork is a cross-breed of Duroc, Yorkshire and Danish Landrace pigs, raised in the mountains of Kinboshi, Japan. In this picturesque environment, pigs can pursue natural behaviours and gain weight naturally without hormones or GMO-feed. Kinboshi Sagabuta pigs are raised to be healthy pigs and healthy pigs produce healthier meat. As a result, the pork product has a higher Vitamin B1 content and good fatty acids which can help lower the risk of heart disease. Not only is the pork from Kinboshi Farms superior in nutrition, it is exceptionally flavoursome; tender, moist and healthy.

Australian Frozen Raw Queensland Spanner Crab Meat
Caught off the coast of Queensland, Australia, Waves Pacific’s Spanner Crab meat is processed raw and frozen to preserve its ocean-fresh sweet, plump and juicy meat.
Conventional processors tend to package cooked, canned and pasteurised meat which is watered-down leaving a “tinny” flavour.
Waves Pacific’s Spanner Crabs are processed the same day they are caught fresh. Skill, care and attention is paid to picking out the raw meat to fill convenient 500-gram packs.
World-renowned chef Tetsuya Wakuda of Tetsuya’s in Sydney has helped to develop this frozen Spanner crabmeat. The result of his expertise and taste of quality ensures that the crabmeat tastes as fresh as if you had caught it yourself. His belief in the product is evident in his featuring of it in many of his signature dishes including Ravioli of Queensland Spanner Crab.
The packs themselves are pure meat, increasing value. One pack yields about the equivalent amount of meat (500 grams/1 pound) that one would get from a 3-4 kg weight of whole crab(s). Each pack of crabmeat comes in easy-to-use re-sealable 500 gram shatter-resistant plastic containers.
About the Spanner Crab
The Spanner Crab, also known as Ranina Ranine, is most commonly caught in the pristine tropical waters off the Queensland coast. Spanner Crabs tend to inhabit tidal-waters, preferring bare, sandy areas. They can usually be found buried in the sand, sometimes at depths of more than a hundred meters, from where they launch attacks on passing prey.
The Spanner Crab fishery is the first in Australia to be recognised as a sustainable fishery.
Taiyouran Japanese eggs have a natural sweetness and rich, thick orange yolk. Chickens are reared on a special diet of Stevia leaves, a natural herb which is 300 times sweeter than sugar.
The chicken’s natural diet and environment results in eggs that have more than 10 times the amount of Vitamin E than the average egg – making them more healthy and versatile to cook with.
In addition, the eggs are put through a sterilisation process that greatly reduces the amount of harmful bacteria. This makes them safe to eat raw and perfect for making dishes such as steak tartar or shabu shabu.
